It is Mother’s Day, Slackers! / Motinos diena, Tinginiai!

If you are not living under the rock (or are not a soulless person who forgets this kind of day), you have to be familiar with a fact that this Sunday is the day to celebrate our beloved, fabulous, amazingly fantastic and gorgeous Mommies! Even though I love my Mother to bits, it happens that not always I can show how much I appreciate her and, especially, give her all my time. Unfortunately, due to my hectic schedule and chaotic personality (to be honest, just because of my chaotic AND hectic personality), I leave everything for the last day and I have to come up with the ideas how to surprise my Mom almost on the spot! So here you are a couple of little things how to make this Sunday lovely, pleasant and memorable to your stunning Moms.


I know, it can be lame or such a cliche but you hardly will find a person who does not like it. But make it shine!

Of course, the main focus has to be on what she likes. Spoil her – give her all her favorite things! And if she is a bit of a sleepy head, it can be appropriate time for mimosas (personally, I do not thing that exist such a thing as a bad time for mimosas!).

And when I say “give her all her favorite things”, I do not talk just about food. Start from the tray, go to the flowers, base it with a food and finish with the napkins. Everything has to be perfect and according to your mother’s taste.

Serve everything in bed, ask all family to join your party in their PJs and make a sweet mess with all this delicious food you have prepared! Or if you have a nice balcony or terrace and a great weather, it can work out even better!

I will help with some of my favorites recipes:

Baked eggs in Creambaked_eggs_300

2 tbsp olive oil 1 tbsp dry bread crumbs
4 small shallots, finely chopped 1 tbsp finely chopped chives
2 garlic cloves, minced (optional) freshly ground black pepper
4 large eggs 1 tbsp chopped taragon
3 tbsp shredded Gruyere 3/4 cup heavy cream or creme fraiche


  • Preheat the oven to 325°F (160°C). Heat the oil in a frying pan over medium-low heat. Add the shallots and garlic and cook, stirring, until the shallots are golden. Stir in the tarragon and 2 tbsp of the cream.
  • Spread equal amounts of the mixture in 4 × 6oz (180ml) ramekins, making a slight well in each portion of the shallots. Crack an egg into each dish. Divide the remaining cream among the ramekins.
  • Mix together the Gruyere, bread crumbs, and chives, and season with pepper. Sprinkle in the ramekins. Place the ramekins on a baking sheet and bake for 10–15 minutes, or until the eggs are cooked to your liking. Serve at once.

Strawberry Kiwi Champagne Cocktailstrawberry-kiwi-477_1

3 kiwis, 2 cut in half, 1 peeled and sliced for garnish 1 bottle sparkling cider or Champagne
1 cup chopped fresh strawberries, plus 4 whole strawberries for garnish


  • In a medium bowl, scoop out the insides of the 2 cut kiwis with a regular teaspoon. Add the cut strawberries and mash the fruit with the back of a fork until a fairly smooth paste is formed.
  • Place about 1 tablespoon of the fruit paste in the bottom of each glass and fill with cider or Champagne. Garnish with the whole strawberries and sliced kiwi.

Lemon Ricotta Hot Cakeslemon-ricotta-pancakes

6 large eggs, separated 1/4 cup sugar
1 1/2 cups whole-milk ricotta cheese 1/2 teaspoon salt
1 stick unsalted butter, melted and cooled 2 tablespoons grated lemon zest
1/2 teaspoon pure vanilla extract Powdered sugar for dusting
1/2 cup all purpose flour


  • Heat a griddle. Whip egg whites until they hold firm glossy peaks, and set aside. Beat ricotta, butter, egg yolks, and vanilla together and set aside.
  • Whisk together flour, sugar, salt, and zest. With a rubber spatula, stir dry ingredients gently into the ricotta mixture. Stir a spoonful of whipped egg whites into the batter, then gently fold in the remainder.
  • Grease the heated griddle, if necessary. Drop 3 tablespoons of batter for each hotcake on the griddle, allowing space for spreading. Cook until golden on the bottom and the top shows a bubble or two. Gently flip, and cook until undersides are light brown. Dust with powdered sugar.141148984851ff9e8b5a97a


This one can be so much fun! I know,  everyone probably is sick of this sakura boom but even if you are totally over cherry blossoms, there are so many other great parks and gardens where you can have beautiful lunch. But once again – think about everything: a basket, food, a bottle of prosecco, nice glasses, cutlery – everything matters!

The most important thing is that your mother does not have to know about a picnic, just tell her about lunch out. Try to sneak in a basket in a car and voila!Picnic+for+Two%7CIntrinsic+Beauty4

Couple of recipes to fill in a basket:

Chicken and Marinated Zucchini Sandwichmed104695_0609_zuch_sandwich_vert

  • tablespoon(s) thinly sliced lemon zest
  • tablespoon(s) fresh lemon juice
  • tablespoon(s) olive oil
  • pound(s) chicken cutlets
  • zucchini
  • 1/4 red onion, thinly sliced
  • Salt
  • Pepper
  • handful(s) chopped toasted almonds
  • handful(s) fresh parsley
  • loaf(s) Italian bread
  • Romaine lettuce
  1. Slice 1 zucchini into ribbons with a vegetable peeler. Combine with red onion, thinly sliced lemon zest, fresh lemon juice, and olive oil. Season with salt and pepper and let stand 30 minutes.
  2. Meanwhile, season chicken cutlets with salt and pepper and broil until cooked through. Let cool, then shred and add to marinated zucchini along with a handful of chopped toasted almonds and fresh parsley. Cut Italian bread in half horizontally and hollow out. Make a sandwich with chicken mixture (including juices) and romaine lettuce leaves.

Tomatoes and Peaches

Toss together sliced seeded tomatoes and peaches, along with thinly sliced red onion and chopped parsley or rosemary. Add a bit of mozzarella or feta cheese. Dress at the last minute with olive oil, lemon juice, salt and pepper.

Ask your Mother on a date or for a girls night out


Do you love going out with your besties? And how often do you do it with your Mom? Hopefully, as often as possible, but in case you are not, make an exception on Sunday night and ask her to join you for drinks in one of your favorite cocktail bars. Take her to a place where you like to hang out with your girls. I promise you, this makes you bond immediately!

Spend your time dolling up together, after grab a taxi and hit the bar!


Start from an official invitation: you can be fancy and ask to deliver it along with a flowers to her work or home. After she agrees to go out with you (if she does!), take her somewhere she would love to be and be the best man you can that night! Because this is the night that counts!

So boys and girls, love your Mothers and make not only this Sunday the best day of her life but every single day of her life! Work for it!
